I have a hard time deciding between a Jack Burton or an Egg Shen quote:
Jack:

I don't know why, but the way in which Victor Wong delivered his lines was so winning, unique, and rhythmic that I just enjoy hearing him make that speech.
so many great quotes on this page, it's hard to narrow it down. For some reason even the small unnoticed lines are special to me. There's so many of those...
But Jack has so many classics all by himself:
