Man, this has been a journey, I use overseerr and noticed the wrong info, after lot of searching found tmdb to be the source and now here I'm hoping for this to be fixed.
Me too, here to see if it can be fixed. They've locked the date for some damned reason, even though Apple TV advertises it as premiering a day later (tomorrow)!
Apple, IMDB, TVDB, Wikipedia reference the 17th but you are still missing the point... But hey, it's the same problem every time with all Apple series.

AppleTV+ release its content at 0h GMT on the advertized date. At that time, we are still the evening of the previous day in the US.

Does that not mean it's a UK release then? If that's the case should that not be the date specified, like with Winter King, not it's US dates?

No, it is produced by US companies. So, its origin country is the United States.
"Winter King" was produced by an UK company.
