This show is organized by letters like an encyclopedia. For each letter there are numbered episodes like A1-A5 , B1-B11 and so on. The episodes are added irregularly and not in the order of the numbering. There is no information about the aired date for a lot episodes. So I'd like to organize it in a season per letter: season A with episodes A1-A5, season B withe episodes B1-B12 and so on. So it is possible to add new episodes in the right "letter season".

But the seasons are already locked. So would it be possible to unlock them, so I can add new ones?

This is unfortunately not allowed. Episodes have to be in the original airing order. Someone need to find the original air dates.

The main tv network for the episodes, the Bayerischer Rundfunk (BR), published a printed weekly/2-weekly radio guide that also included the tv schedule for the original network of this show, BR-alpha. This radio guide had 3 different names over time:
For the last one, you can find many full issues online that are searchable (for example, here). But the older guides are most likely not online and you have to find them in libraries/archives somewhere. I just did a very quick search in one of the big German library catalogues -> apparently, all 3 tv guides are in Munich, 2 of them in Regensburg, and the second one even in Berlin. But none of those is digitized - you have to look them up in those cities.
I don't think there's any other place to find those dates - I can't think of any other.
