How...?! I'd be happy to, but can't find that functionality. I clicked on "edit page" but did not see any option to enter date information.

Oh, I see what's going on. When you see a "XX has not yet been translated to en-US (English)" page, just click on the "Create translation" button and you will be redirected to the right page.
