It takes about two years to get a season done. Maybe longer, depending on the case, but this is just half the season. The rest of it will drop in October.
Based on that quote, it can be assumed that volume 3 is season 2 and volumes 4 and 5 are season 3. Volumes 1 and 2 are season 1, as per the initial 12 episode series order.
